Taking responsibility and making decisions based on the company philosophies and standards
with the assistance of the GM

Assist in the efficient and effective day-to-day operation of F&B facilities operation focusing on
the operational performance of nominated areas and staff.

Strike a balance between customer satisfaction and effective business management, ensuring
financial viability, and facilitate smooth-running customer services, whilst ensuring staff work
together as a team.
Being present for the guest, offering assistance, comfort & attentions at all times.

Specific Responsibilities
- Overseeing weekly schedules for Front Desk, Valet, Restaurant and Housekeeping
Staff.
- Ensuring that staff adhere to their schedule, making adjustments when necessary and
helping when necessary
- Ensure that high standards of cleanliness and hygiene are maintained throughout all
work areas
- Assist in managing budgets and financial plans & maintaining the statistical and
financial records
- Overseeing F&B department during all three eal periods and room service in conjunction
with the restaurant manager and chef
൦ Making sure that breakfast service runs smoothly, helping when
necessary & keeping an eye on times for room service orders
- Interacting with guest at all times and dealing with customer complaints and comments
- Addressing problems and troubleshooting
- Getting constant updates from the Front Desk staff for anything special or what might
have occurred previous to the current shift or while attending to other duties
- Making sure that special requests/requirements of arriving guests are followed through
- Carrying out inspections of the property and services
൦ Checking all public areas & making sure that everything is in order
൦ Daily room inspections
- Writing "Welcome Letter" to each arrival of the day and selecting guest for special treats
upon arrival
- Be on call for night emergencies
- Act as Manager on Duty in the absence of the GM
- Having a good knowledge of the area to recommend attractions or direct guests in a
competent manner
- Knowledge of our PMS (Maestro, POS (Silverware) and diverse software used at the
property
- Training and monitoring staff members (for example: Employee Assistance Program,
Fire Safety Training, Tips Training, Tor of Property, etc).

from overseas (for example: attending programs, trainings, and meetings)

Food and Beverage Responsibilities
- Total responsibility of the day to day running of the F&B department
- Ensure restaurant service complies with the standards outlined in the Forbes 5 Star
guidelines, Relais & Chateaux guidelines and AAA Five Diamond guidelines
- Also, continuously seek out ways to improve restaurant service and upgrade the guest
experience
- Ensure budgetary controls and oversee pricing and purchasing in all F&B areas
- Recruitment and supervision of a highly skilled F&B team
- Responsible for creation and implementation of seasonal F&B marketing strategies
- Ensure that standards of F&B are maintained and improved
- Maintain, develop and improve restaurants, bars, and other guest services
- Ensure adherence to food and presentation standards
- Monitor F&B cost
- Liaise with hotel staff and report to the GM
- Liaise with facility supervisors/managers to ensure restocking and equipment
maintenance needs are communicated to GM
- Supervision of F&B staff ensuring all standards and procedures are met
- Closely monitor staff performance
- Ensure that all F&B facilities are set up according to company standards and that they
are cleaned thoroughly at the end of shift

Decision making authority
Always depending on each individual situation, you should be permitted to authorize the
following:
- call/cancel Fire Brigade in case of fire/false alarm
- call for professional help if electrical/plumbing/phone system/computer system
problems occur and can not be solved by own staff
- taking precautions around property (incl. Guests & Staff) due to weather
conditions
- authorizing welcome presents for guests
- complimenting or promoting food and/or beverages within service (breakfast,
room service, dining room)
- send staff home (little work, weather conditions)
- make room changes (moves or upgrades)
- advise guest politely to follow hotel's policies (jacket, non-smoking property, cell
phones, noise level, etc.)
- organizing staff for functions
- buying accessories specially requested by guests
